Chicken Chyghyrtma

Word of Chigirtma is not alien in Azerbaijan kitchen. There are so many types of chigirtma. Spinach Chyghyrtma, Tomato Chyghyrtma, Potato Chyghyrtma, Eggplant Chyghyrtma, meat Chigirtma and so on. Combining all dishes is that finally shed the whipped eggs. Chicken Chyghyrtma is one of such food. It is very tasty. The method of cooking this dish changes from city to city, district to district, and even from family to family. Here you can see in my method. Before cooked chicken I would like cook it with onions, tomatoes warm fire for a while for tastes interfere with each other and the tomato sauce become soft. I don’t use a lot of eggs. My friend Rose cooked this food in a different way. She added lemon sour in the dish. I think it would be delightful. I would like one day use her method. I’ve heard that in Salyan district chicken chigirtma cooked with lemon juice. How do you cook this dish? Interesting.

CHICKEN Chyghyrtma 

Intended for 4-6 servings


3 taplespoons vegetable oil
2 tables poons butter
1 large onion, divided in half  - annular
1 pound chicken pieces (I used boneless thigh meat. Should be about 10 pieces)
1 teaspoon of salt
1/4 teaspoon pepper
4 big ripe tomatoes
finely chopped 3 eggs
chopped coriander to the taste

NOTE 1: If your tomatoes isn’t well ripe and watery, soft a tablespoon tomato with half a cup of boiling water then add it into the dish with tomatoes .

NOTE 2: This dish is also can be cooked in stove and directly served in the table. For to do this, before adding egg, drain dish stove pot, add the eggs on the dish, and cook until eggs are cured in 200C degree stove. Then give it served in this pot.

1. Heat 2 tablespoons of vegetable oil in pan then fry onion for about 10 minutes. Drain fried onion in a other pot and put the pot aside.

2. Heat the remaining vegetable oil and butter in a pot which you cooked onion in it. NOTE :  If you are using melted fat, then use 3 tablespoons melted fat instead of vegetable oil and butter. Add the fat pieces of chicken and fried both sides of the chicken.

3. Shed salt and pepper in the chicken. Add toasted onion, chopped tomato on the chicken. Close the lid of pot, stirring dish from time to time, and cook until chicken meat will be soft (about 25 minutes).

4. Pour beaten eggs over the chicken. Close the lid of pot and cook the dish a little bit of the egg as cured (it takes about 5-7 minutes ). During this time, do not mix the pot! Before give it served on the table shed chopped coriander. Eat with bread or plov. Bon appetit !
